Next to traditional German Dresdner Stollen, “Das Stollenhaus” proudly offers a range of locally made Stollen. Our partner Mark Burton (best kind bakery) acquired the closely guarded recipe from Gerhard Weitzel, a German baker he used to work with at Four Seasons Vancouver. The ingredients and the making are based on a recipe from a former pastry chef for the King of Sweden.

“Stollen” is a fruit bread of nuts, spices, and dried/candied fruit, coated with powdered sugar with a marzipan filling. It is a traditional German bread eaten during the Christmas season and one of the most famous Christmas treats in Germany.

We agree with Mark, that traditional Stollen is very special that people anticipate and wait for, which can be rare these days. Mark’s making of the stollen is truly ‘best kind’, in total a three-day process that involves care and attention, which he finds so important. It’s important to not let things like this slip away for convenience and to show respect to the ingredients and the people who turn the ingredients into special things.
